5 recipes for Ukrainian kruchenyky

Ukrainian cuisine is famous for its delicacies and variety of dishes. Almost every settlement, whether it is a city, town, village or small farm, has its own and unique variation of well-known dishes. Ukrainians especially love various meat dishes and one of the most common is kruchenyky. Kruchenyky are meat rolls stuffed with various fillings from vegetables to dried fruits. In anticipation of the New Year and Christmas holidays, we have made a selection of the most delicious kruchenyky recipes that your family and friends will enjoy with joy.

Chicken meat dumplings

To prepare the dish you will need:

  • chicken meat (fillet part) – 0.5 kilograms,
  • potatoes – 0.5 kilograms,
  • lard or bacon – about 100-150 grams,
  • hard cheese – 150 grams,
  • butter - approximately 50 grams,
  • sour cream, salt, aromatic herbs, spices and seasonings - to taste.

Start cooking by processing the chicken, namely, rinse it, pat it dry, and remove the membranes and skin. Then cut the meat into thin slices and lightly beat it, season with salt and pepper and other favorite spices. The next step will be to prepare the filling for the kruchenyky, for this you need to finely chop the bacon and herbs, grate the cheese, mix the chopped ingredients and add soft butter and sour cream to them. Grease the beaten meat with the resulting mixture and form rolls, you can fix the shape of the rolls with either culinary thread or wooden toothpicks.

The next step is to peel the potatoes and cut them into circles. Then, on the prepared pieces of foil (the size of the foil should be sufficient to completely wrap the kruchenyk), place a potato circle, top with the kruchenyk, and wrap with foil. Place the wrapped kruchenyk on a baking sheet and bake in the oven for 45 minutes at a temperature of 180 degrees.

When serving, we recommend sprinkling the dish with chopped herbs.

Volyn Kruchenyky

To make these delicious rolls, prepare the following ingredients:

  • pork meat – 0.5 kilograms,
  • onion – 1 piece,
  • sauerkraut – 250-300 grams,
  • sour cream – 50-70 grams,
  • sunflower oil for frying,
  • breadcrumbs,
  • salt, spices, seasonings to taste and preferences.

First, you need to wash and clean the meat, then cut it into thin slices and beat it lightly. Salt the beaten meat and rub it with your favorite spices and pepper. To prepare the filling, fry the finely chopped onion in oil until golden brown, then add the cabbage, well squeezed from the brine, and simmer together with the onion for another 10 minutes. Then let the filling cool.

Spread the cooled filling on the meat and form rolls. In order to keep the shape during cooking, the rolls should be wrapped with cooking thread. Dip the rolls in sour cream and breadcrumbs. Fry the breaded rolls in a heated frying pan with sunflower oil, then cover with a lid, reduce the heat and simmer for another 20 minutes.

Pork dumplings in sour cream

One of the most common recipes for Ukrainian kruchenykyu

Required ingredients:

  • 0.5 kilograms of pork pulp, preferably the butt part,
  • 150 grams of hard cheese,
  • 2 onions,
  • 1 carrot,
  • 2-3 tablespoons of sour cream,
  • 1 bunch each of parsley and dill,
  • salt, spices and herbs to taste,
  • oil for frying,
  • breadcrumbs.

Wash and clean the meat, then cut into pieces like chops, lightly beat, salt, pepper and add other spices to your liking. Sprinkle the beaten meat with finely chopped herbs, pre-cut and fried onions, and grated cheese. Form rolls, wrap with cooking thread, bread in breadcrumbs and fry in a pan until golden brown.

Separately, prepare the stewing sauce by frying finely chopped onion and grated carrot, then add sour cream, salt and spices to taste. Transfer the fried kruchenyki to the sauce, cover and simmer over low heat for 25-30 minutes. When serving, sprinkle the dish with chopped herbs.

Pork knuckles with mushrooms

A delicious, aromatic and nutritious dish that will decorate any festive table. To prepare it you will need:

  • 500 grams of pork pulp,
  • 200 grams of your favorite mushrooms,
  • 2 onions,
  • salt, spices, and oil to your taste.

The meat must be washed, dried, cut into thin slices and beaten off, then rubbed with spices, pepper and salt. Separately, prepare the filling, for this you need to fry chopped onions and mushrooms (you can choose any mushrooms, but remember that some mushrooms require pre-boiling before frying, so be careful) and let it cool.

Spread the cooled mushroom filling on the minced meat, roll up the rolls and fix their shape with cooking thread. Fry the formed rolls in a heated frying pan until golden brown, then add a small amount of boiled water and simmer under a closed lid for about 15-20 minutes.

We recommend serving these krucheniki hot with a vegetable side dish.

Krucheniki with prunes in cream

Prunes are a popular ingredient in Ukrainian cuisine, and when combined with meat dishes, they begin to play with new facets of taste and leave almost no one indifferent. We suggest you treat your loved ones to prune rolls.

Ingredients for cooking:

  • chicken fillet - 300-400 grams,
  • prunes (dried or smoked) – 150 grams,
  • cream 20-30% fat content - 50-70 ml,
  • soy sauce – 30-40 ml,
  • mayonnaise - 100 grams,
  • 1 onion,
  • salt, pepper and favorite spices to taste.

Chicken fillet must be washed, cleaned of films, cut into thin slices and lightly beaten, salted and rubbed with spices. Then put the beaten meat in a marinade made from a mixture of mayonnaise, soy sauce and chopped onion. While the meat is marinating, prepare the prunes, for this they must be washed and steamed with boiling water, then dried a little with a towel. Put the prunes on the marinated meat, form rolls, fix their shape with toothpicks or culinary thread. Put the krucheniki in a heat-resistant baking dish, pour the marinade in which the meat was marinated and pour cream. Bake the krucheniki in the oven for 30-35 minutes at a temperature of 180-185 degrees.
