So we have been waiting for fresh vegetables on our tables. Finally, we can enjoy not canned vegetables and fruits, but fresh ones, sometimes straight from the garden. We offer you several recipes for dishes that do not require much time and effort to prepare, and what is very important, they taste great cold.
First courses
Cold kvass soup
Ingredients: meat or boiled sausage - 300 g, chicken eggs - 4 pcs., potatoes - 3–4 pcs., fresh cucumbers - 4 pcs., radishes - 4–5 pcs., green onion - 1 pc., dill - 1 bunch, whey or kvass - 2 l, salt, black pepper to taste.
Preparation
Meat, eggs, potatoes – boil, cool, cut into cubes. Cucumbers and radishes are also cut into cubes. Simply chop the onion and dill finely. Mix all the ingredients, season with salt, pepper, add whey (kvass) and mix again. Place in the refrigerator for 1 hour. Before serving, you can add sour cream to each portion if desired.
Refrigerator
Ingredients: beets - 300 g, potatoes - 3–4 pcs., cucumbers - 100 g, a bunch of greens, eggs - 3 pcs., meat or sausage - 200 g, kefir - 1 l, mineral water - 1 l, 6 percent apple cider vinegar - 1 tbsp. l, pepper and salt to taste.
Preparation
Boil the eggs hard-boiled, the potatoes and beets in their jackets. Then cut them into small cubes. Grate the cucumbers. Cut the boiled meat or sausage into small strips. Chop the greens. Mix everything, add salt and pepper, pour cold kefir and let stand for a while. Then pour chilled mineral water into the dish and leave for a while. You can put it in the refrigerator. Add a piece of boiled egg and finely chopped greens to each serving.
Tarator
Ingredients: kefir – 1 liter, tan or lactic acid, cucumbers – 3–5 pcs., garlic – 5 cloves, nuts – 1 tbsp., dill – a bunch, oil – 2–3 tbsp. l., mineral water – 0.5 l, salt and pepper to taste, ice.
Preparation
Mix kefir with mineral water. Cut cucumbers into small cubes and add to the liquid base. Then gradually add: chopped nuts, crushed garlic, chopped dill, spices, oil. Mix everything well and put in the refrigerator for an hour. If desired, you can add ice to each serving.
Main courses
Boats
Ingredients: zucchini or eggplant – 3–4 pcs., minced meat – 200 g, rice – 2 tbsp. l., mushrooms – 2–3 pcs., hard cheese – 100 g, salt and pepper to taste.
Preparation
Boil the rice. Wash the zucchini (eggplant), cut in half, clean the middle (you should get boats). Finely chop the middles of the zucchini (eggplant), mushrooms and mix with rice and minced meat, salt and pepper. Fill the boats with this mass and put them to bake. When the dish is almost ready (the zucchini becomes soft), sprinkle with grated cheese. The boats can be served both hot and cold.
Ratatouille
Ingredients: eggplant – 1 pc., zucchini or squash – 2 pcs., bell pepper – 2 pcs., tomatoes – 3 pcs., onion – 2 pcs., garlic – 2 cloves, mushrooms – 7 pcs., oil for frying, dill and parsley – a bunch, salt and pepper to taste.
Preparation
Cut the eggplant, zucchini and pepper into large cubes. Peel the tomatoes (you need to dip them in boiling water for 30 seconds) and cut into large pieces. Dice the onion and mushrooms. Finely chop the garlic. Chop the herbs. Heat the oil and fry the onion and garlic, then gradually add the eggplant, zucchini pepper, mushrooms, tomatoes, salt and pepper. Simmer the dish under a lid for 15–20 minutes. Add the chopped herbs to the finished dish.
Zucchini sandwiches
Ingredients: zucchini – 3 pcs., cheese – 300 g, tomato – 4–5 pcs., sour cream – 100 g, minced chicken or turkey – 300 g.
Preparation
Cut the zucchini and tomatoes into slices. Season the minced meat with salt and pepper. Place on a baking sheet in layers: zucchini-minced meat-tomato. Spread sour cream on top of each sandwich and sprinkle with grated cheese. Bake in an oven preheated to 180 degrees for 20–25 minutes (until the cheese has a golden crust). Serve cold. If desired, sprinkle with chopped herbs.
Salads
Shopsky salad
Ingredients: tomatoes – 2–3 pcs., cucumbers – 2 pcs., bell pepper, onion, hard cheese – 100 g, sour cream – 2 tbsp. l., salt and pepper to taste.
Preparation
Chop all the vegetables, add spices, season with sour cream, and sprinkle with grated cheese.
Cheese salad with vegetables
Ingredients: cheese – 150 g, pepper – 100 g, tomatoes – 100 g, sour cream – 2 tbsp. l., spices to taste.
Preparation
Cut the peppers and tomatoes into small pieces, mix with the cheese, add salt, herbs. Season with sour cream and put in the refrigerator for 5–10 minutes.
Carrot and sorrel salad with apples
Ingredients: sorrel – 150 g, carrots – 2 pcs., pickled cucumber, apple, onion, oil – 2 tbsp. l., radish – 3 pcs., dill.
Preparation
Finely chop the sorrel. Grate the apple, onion, and carrot on a fine grater. Mix everything, add the sliced cucumber, season with oil. Before serving, sprinkle with herbs and finely chopped radish.
Desserts
Kefir-strawberry dessert with mint
Ingredients: kefir – 400 ml, strawberries – 280 g, sugar – 4 tbsp. l., mint.
Preparation
Put sugar in kefir, beat thoroughly, then put chopped mint leaves in it. Cut strawberries in half, put in glasses and pour prepared sweet kefir in them. Let it brew for 2 hours, before serving put in the freezer for 10 minutes.
Strawberry blancmange
Ingredients: strawberries – 500 g, cottage cheese – 200 g, milk – 400 ml, gelatin – 20 g, vanilla sugar – 10 g.
Preparation
Pour the gelatin with milk and leave to swell. Then put the mixture on the fire and, stirring constantly, heat to 60 degrees. Add cottage cheese, sugar, vanilla and beat with a blender. Wash the strawberries, dry them (leave a few berries for decoration), cut them. Put the strawberries in a mold (silicone or detachable), pour the mixture on top. Cool and put in the refrigerator for 2 hours (you can longer - the main thing is that it hardens). Put on a dish and decorate with berries and mint leaves.
Homemade ice cream
Ingredients: milk – 250 ml, cream 25% – 250 ml, egg yolks – 5 pcs., sugar – 0.5 cups, vanilla sugar – 10 g.
Preparation
Boil the milk and cool. Mix the yolks with sugar and vanilla sugar and beat. Without stopping stirring, carefully pour the mass into the milk. Put the mixture on the fire, heat it. Stir constantly until the mixture thickens slightly. The finished mixture should be cooled and put in the refrigerator. Whip the cream and add it to the cooled cream, mix well, transfer to a container and put in the freezer for an hour. As soon as the ice cream begins to harden, beat it with a mixer (this will make the ice cream more homogeneous). Put it in the freezer again for an hour, and then beat and put in the freezer for 2–3 hours. Before serving, put it in the refrigerator for 20 minutes. The dish can be decorated with fruit, chocolate or nuts.
Drinks
Berry smoothie
Ingredients: strawberries, blackberries, raspberries, peach juice, sugar syrup.
Preparation
Blend all ingredients. Serve in a glass with ice. You can garnish with fresh berries.
Kvass
Ingredients: crackers (from black bread) – 300 g, sugar – 300 g, yeast – 15 g, water – 5 l.
Preparation
Toast the crackers in the oven until golden brown (the more you toast them, the richer the color and flavor will be), pour them into a saucepan and pour 3 liters of boiling water, cover with a lid and leave to cool. Strain and set aside, and pour 2 liters of boiling water over the crackers again and leave for an hour. Strain, pour all the liquid into one container, add sugar and yeast, mix and leave at room temperature for 8 hours. If desired, you can add lemon, raisins and blackcurrant leaves. Bottle the finished drink and store in the refrigerator.
Milkshake with strawberries and ice cream
Ingredients: ice cream – 250 g, milk – 500 ml, honey – 2 tbsp. l., strawberries – 100 g.
Preparation
Dissolve honey in warm milk and put the mixture in the refrigerator. When the mixture cools, add ice cream to it and beat with a blender. Add berries and beat again. Before serving, strain the mixture to get rid of the seeds. You can garnish with mint.
